How sustainable is and will food consumption remain in times of crisis

Multiple crises have made the market for sustainable food a rollercoaster ride. Spectacular growth for sustainable food in the first two years of coronavirus has been followed by a hangover and uncertainty. Dr. Robert Kecskes and Jörg Reuter analyze the market situation and discuss different development scenarios for the next 24 months. How stable are consumer values in times of crisis, what does the current development mean for food start-ups on the one hand and established food brands on the other?

FUTURE OF FOOD: Between molecular upcycling and romantic mountain meadows

Food has a significant impact on the overloading of planetary boundaries. The food industry is responsible for one third of global greenhouse gases and more than two thirds of biodiversity loss. Approaches that lead to regenerative production and consumption processes are therefore becoming increasingly important and urgent. This fundamentally concerns sustainable primary production of raw materials and value creation from all streams with a focus on direct human nutrition. Food waste must be significantly reduced, as must the proportion of animal proteins in our diet. In recent years, more money has been invested in the development of foodtech solutions than ever before.

Prof. Tilo Hühn from the ZHAW and Jörg Reuter from the Food Campus Berlin, discuss the most important developments between bioreactors and AI-supported food waste prevention and also talk about why cows in the mountains still make sense. Prof. Tilo Hühn is considered one of the pioneers of food architecture and has been working with bioreactors in the context of food since 2005. Jörg Reuter is designing the Food Campus Berlin, which is due to be completed by the beginning of 2025 and is already regarded as the epicenter of the food industry and the central platform for a sustainable food industry.
